Cherry Tomatoes with Feta and Oregano Great way Cherry Tomatoes with Feta and Oregano Great way of using those morsels of tomatoes which have been sitting around too long. You can leave them whole or halved Pop them in a sturdy and thick based pan - a creusset pot works well - preheat a good dose of quality olive oil. Add some chopped garlic - let the natural juices caramelise - add the feta - another item that may have been sitting in your fridge that needs to be used - as mine was the case. The inspiration for this recipe for this was found in a cookbook called Kitchenella Rose Prince used a tin of tomatoes for her recipe but as all cooks know - cooking is about using, making do and creating foods which inspire. Stunning on sourdough toast or any thick flat bread. It’s perfect for these times for a swift supper or lunch and unlike a bruschetta - its warming and perfect for this time of the year. Will make a great starter also for a dinner party. With the winds bellowing outside all day long, it With the winds bellowing outside all day long, it called for my rendition on the Irish Stew. I made a lamb bone broth several days ago and used the scraps of meat off the bone. Stock was made with celery, carrot, small onion, black peppercorns, bay leafs and fresh parsley. Left it to simmer for several hours for full flavour off the bones. Full of homemade goodness - I also precooked 100g pearl barley yesterday. I’ve been desiring to make Irish stew/soup for over a week now but with having a few items in the fridge that needed eating prior, this stew kept on being pushed back. Boy was this worth the layering of preparation and waiting for! Tonight I decanted the stock in a heavy based saucepan - added one small onion sliced, a celery stick into narrow chunks , two smallish carrots, half the precooked barley, two small salad type potatoes. They were amazing!!! Firm and waxy! Ooooooo So good. Returned the cooked lamb neat off the bone into the pot to boil, then turned it down to simmer. A cozy afternoon of watching the second half of Elona Holmes 2 and bowl of popcorn. After spending my day off on the Imac - copying and pasting all my content onto documents having had my website corrupted and all my plug-ins mysteriously disappear and my web host company going bot - No longer giving technical support by humans but instead a series of back and forths of emails with no consistent techie assistant and weeks of wasted time. Don’t bother with TSOhost a web platform which originated with real people support. Thats why i joined them many moons ago in 2017. Their annual hosting memberships and rates have increased each year - sadly their services down the pan. On the positive side its had me look at my features and articles and am amazed how appropriate much of the topics are relevant for current times…energy So will be posting vignettes of my article and will be looking for a magazine that wants to offer me regular spot to help their readers!
